Making Creamy Salad Dressings With Avocado Powder

Creamy salad dressings are delicious, but they can also be overly laden with saturated fat and cholesterol. If you want to enjoy creamy dressings without the guilt, then consider making your own using avocado powder. The avocado powder adds creaminess to the dressings, but it's high in healthy, unsaturated fats instead of the less-healthy saturated kind. Avocado powder is also versatile. For instance, here are three easy, creamy dressings you can make with it.
Green Ranch
If you like ranch dressing, then this healthier, avocado-based version is a good alternative. You can't see the green herbs very well because the dressing itself is also green, but that's a small price to pay for the deliciousness. You'll need:
- 1/4 cup avocado powder
- 1/4 cup milk (use almond milk for a vegan dressing)
- 2 tablespoons white vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried parsley
- 1/2 teaspoon dried oregano
- a pinch of dried dill weed
- 1/4 teaspoon kosher salt
Whisk all of the ingredients together, and let the dressing sit for about 10 minutes so the avocado powder can fully hydrate. Stir gently again, and spoon over your salad. Enjoy!
Green Caesar Dressing
Maybe it's a good, creamy Caesar dressing you crave. This one is excellent on a simple salad made with romaine lettuce, croutons, and perhaps a little shaved Parmesan cheese. You'll need:
- 2 tablespoons avocado powder
- 2 tablespoons water
- 1 tablespoon white vinegar
- 1 teaspoon anchovy paste
- 1 teaspoon minced garlic
- 1/2 teaspoon onion powder
- 1 teaspoon lemon juice
- a pinch of kosher salt
- a pinch of black pepper
Mix all of the ingredients together, and let rest for 10 minutes. Stir again. If the dressing seems too thick for your taste, add an additional teaspoon or two of water or vinegar. Dress your salad, and enjoy.
Sweet and Tangy Green Dressing
This one is truly unique. It might remind you of French dressing with its sweet tang, but its green color really sets it apart. You'll need:
- 2 tablespoons avocado powder
- 1 tablespoon honey
- 1 teaspoon prepared Dijon mustard
- 2 tablespoons white wine vinegar
- 1 tablespoon olive oil
- a pinch of salt
Mix all of the ingredients together, and let stand for 10 minutes. Taste the dressing, and add additional honey if it is not quite sweet enough for you. Enjoy!
